Chocolate Chip Banana Bread

I wanted to use up some banana's that were ripening quickly to uselessness so i looked up banana bread recipes. I found one tempting recipe but it required baking soda (which i did not have). The author of bakememore has inspired me to bake more often. I don't bake on a regular basis because i tend to be horrible at it. The thing is, this recipe includes a cake mix from a box. It is more delicious than i'd imagined. I used a yellow cake mix, it was sweeter that what i would have liked (probably because of the chocolate chips). I think i'll try pineapple mix, like the author did, next time.  :)

The bread took about 50 minutes to cook. The consitancy was moist and fluffy, lots of flavor, and would pair up GREAT with coffee (my FAVORITE).

Banana Bread Fast!
Ingredients:
  • 4 tablespoons (1/2 stick) butter, melted
  • 1 (18.25 oz) cake mix (*I used a pineapple mix)
  • 1 cup ripe bananas, mashed
  • 2 eggs
  • 3/4 cup nut or chocolate chips (I used white chocolate)
Directions:
Combine all ingredients and mix for 2 minutes. Pour into greased 9 x 13 bread pan. Bake for 40 – 50 minutes, of until toothpick comes out clean.
